Honey Garlic Chicken Breast Recipe

I love incorporating Meatme products into my meal prep routine, because Meatme works with farmers who have the highest animal welfare standards and don't use any antibiotics, hormones or chemicals. This recipe uses chicken breast, which is an extremely lean cut of meat. Using oils such as avocado oil and sesame oil in this recipe ensures you are still getting the healthy dietary fats you need. Chicken breast can sometimes have less flavour than fattier cuts of meat, such as chicken thighs, which is why it is nice to find a flavourful sauce to go with it. This delicious recipe is easy to make, and your whole family will LOVE it! 


Prep Time: 5-10 minutes
Cook Time: 10 minutes 
Serves: 2 (you can double or triple this recipe) 
Chicken:
1.3 lbs of Meatme chicken breast
3 cloves of garlic, minced
1 tbsp garlic powder 
Salt & Pepper


Sauce:
1 tbsp of tomato paste 
1/4 cup honey 
2 tbsp of soy sauce + 1 tbsp of water 
1 tbsp of hoisin sauce 
2 tbsp sesame oil 
2 tsp garlic powder 
1 tbsp cornstarch & 2 tbsp cold water
1 tsp chili flakes (or to taste) 
  1. Cut chicken breast into 1" chunks. Pat chicken to dry with a paper towel. Season with salt, pepper, and 2 tsp of garlic powder. Set aside. 
  2. Prepare sauce: in a small bowl, whisk together tomato paste, honey, soy sauce, water, hoisin sauce, sesame oil, and garlic powder. In a separate small bowl, whisk together cornstarch and water. Once cornstarch is fully dissolved, whisk the cornstarch mixture into the honey garlic sauce mixture. Set aside.
  3. Heat a large cast iron pan on medium-high with 3 tbsp of high smoke point oil (ex. avocado or grapeseed oil). Once hot, add the pieces of seasoned chicken breast and sear for about 4 minutes (try not to stir the chicken too much to allow a nice browning to occur). Near the end of searing the chicken, add the minced garlic cloves. 
  4. Once seared, lower the temperature to low-medium and stir in honey garlic sauce. Coat every piece of chicken with the sauce, and continue stirring for about 3-4 minutes or until chicken is fully cooked.
  5. Enjoy on a bed of rice and vegetables, or with a fresh summer salad. Make sure you spoon extra sauce onto the chicken once served! Enjoy!
