Pork Schnitzel

SERVES 2



- 2 Pork Schnitzel
Marinade:
- 2 cloves of Garlic
- 1/2 cup Olive oil
- 1/4 cup Lemon juice
- 1/2 cup Parsley
- 1/2 cup Basil
- Salt (big pinch)

    This is a great piece of meat to add to a salad with apples, Greens, Walnuts, Grapes, basil and mint with your favourite vinaigrette.

    1. Place all the marinade ingredients in a blender and mix together on high speed, Pour over the pork schnitzel and marinate for 4-5 hours.
    2. Grill on high or cook in a pan on high heat for 1 minute of each side. Let rest for 2 minutes in the pan or on the warm grill with no heat.
    3. Slice thinly and serve over the salad.
