Grilled Pork Chop

SERVES 2

- 2 Pork chops
- Salt (heavy pinch)
- Pepper

Pork chops will cook pretty quickly on the grill or stove top. The trick is to not over cook it and don’t be afraid of a little pink in the meat to ensure maximum juiciness.

    1. Let pork chops temper on the counter top for one hour and season heavily with salt and pepper
    2. Turn half the bbq on high heat and leave it for 10 minutes. Leave one side off on the bbq.
    3. Place the pork chops on the high heat side and sear for 2 minutes
    4. Turn the chop 90 degrees to put nice grill marks on the chop
    5. Flip over and repeat.
    6. Once you have both sides nicely marked, turn the heat to low, move the pork chops to the off side of the bbq and close the lid.
    7. Turn the pork chop every 1 minute and cheque the temperature with a thermometer. When the pork chop is 130F (rare) take off the grill and let rest for 10 minutes.
    8. The pork chop will rest up and continue to cook over the 10 minutes. Serve with roasted potatoes, Grilled broccoli and roasted apples or any grilled fruit.

    Enjoy!
