Ground recipes


These recipes are brought to you by Trevor Bird, chef & owner at Fable Kitchen (Kitsilano, Vancouver) for the ground beef in your Meatme box.

Your Meatme box will come with packs of ground beef. You can use it in any one of your favorite pasta recipes or my all time favourite meal, Shepherd’s pie. My wife likes to eat paleo so she uses sweet potatoes on hers, which is arguably better. 

1. Shepherd’s pie 

 Procedure:
  1. Cook off onions and garlic in a pan until lightly coloured, adding in mushrooms if desired. Cook until the mixture is soft and looks like it’s all cooked together. Add in beef and cook for 5 minutes. Add in the rest of the ingredients and let reduce for 20-25 minutes until very thick. Remove from heat and cool. 
  2. Place the meat in the bottom of a casserole dish and top with the creamed corn and corn nibs.
  3. Slice all the yams into ½ inch slices and tile the top of the casserole with the yams.
  4. You can freeze this and leave it as it, or place in the oven at 350 for 30-40 minutes. Remove tinfoil and finish on broil for 5 minutes before serving. Makes for great leftovers.

  

2. Bolognese

Procedure: 
  1. Over low heat, heat oil, onions, garlic, carrots and water in pot with a pinch of salt. Place a lid on and let cook for at least 30 minutes, until all the vegetables are soft and translucent.
  2. At the same time as you are cooking the vegetables, heat a large skillet over high heat and sear the ground beef with a pinch of salt to try and get a golden brown crust on the beef.
  3. Add ground beef to the vegetables and the rest of the ingredients, except the fresh herbs.
  4. Cook this mixture over med-low heat for at least 30 minutes if not longer, until it is thick and reduced to a good sauce consistency.
  5. Turn heat off and let cool for an hour. Add in fresh herbs.
  6. Optional: when cooking all the vegetables, add in mushrooms of your liking. This will yield a high amount of food, enough for a larger family.
