Maui Ribs, ~ 700-1100g
The Maui Rib is a cut from the lower rib cage of the steer, often referred to as the ‘short plate.’ From the same cut as Short Ribs, these cuts are instead across the bone, done into thin slices so that they are predominantly meat with three small cross cut bone pieces. Because they are thin, they cook quickly on the grill and the marinade penetrates the meat faster. Awesome for a BBQ party!
